Steel-cut oats - definitely the only way to go. If you’re willing to downgrade to rolled (extra thick from Bob’s Red Mill), you might enjoy overnight oats. They’re uncooked, can be eaten cold next day or warmed in microwave. Ingredients-oats, chia seeds, peanut butter, milk (plant or not), a smoosh of honey if you want but I do without, nuts and/or fruit stirred in if you like.

What's the difference in benefit between flax and chia seeds? Are they redundant?

Not much difference, though flax may have an edge for those in menopause transition and chia may have an edge in helping hydration.
